28-How to cook fast sweat corn soup with chicken (Cambodian Food )?

  Cook fast sweat corn  soup with chicken

Ingredients: Serves 2 people 
  • Fresh sweat corn          5
  • chicken breast meat       300g  
  • Salt                      1/2 teaspoon
  • Sugar                     1 table spoon
  • Butter                    50g
  • Pepper(powder)            1/2 teaspoon
  • Onion                     1/2 
  • Coriander leaves chopped  1/2 table spoon
  • Cream                     100 ml
  • water                     1 litre
    Preparation:
       1-Slice all corn and cut onion in thin slices. 
       2-Put butter into the hot pot and fry onion until a bit brown and smelling good. Then add chicken, salt, sugar and fry until well cooked, add water . When the soup boils add corn and cook for about 5-10mins then top up with some chopped coriander leaves and eat.

27- How to Cook Rice With Sea Food (Cambodian Food)?

Cook Rice with sea food
Ingredients: Serves 10 people. 
  • squid                  100g
  • lobster                1kg
  • rice                   1,5kg
  • fish balls             50g
  • Tong Kov mushroom      20g
  • carrot                 1/4
  • Salt                   2 table spoons
  • Sugar                  4 table spoons 
  • Onion                  1/2 
  • ginger slices          20g
  • fresh chopped garlic   4 table spoons
  • oyster sauce           5 table spoons
  • corn starch            5 table spoons
  • seasonal sauce         3 table spoons
  • vegetable oil          100g
  • Chicken soup stock     1.5Litre
  • Chili Sauce
    Preparation:
       1-Clean and  cut lobster, cut squid with a good decoration, mushroom put into the water until soft, rinse out with water and cut in to 2 pieces, clean and cut into 2 pieces, carrot cut into short pieces about 5 cm long.
       2-Clean rice then cook with chicken soup stock and add 3 table spoons of seasoning sauce. When rice is 90% cooked, stir well, decrease heat, then cover.

       3-Fry chop garlic with vegetable oil until a brown. Then add squid and lobster and stir, add corn starch , chicken stock 50ml,and all ingredients. Then put all the mixing that we fried about  on top of the rice and eat with seasoning sauce and  chilly sauce, to taste(serve hot ).

Cook Stir Fried  Fresh Squid on The Flat Pot (Chinese Style)?
Ingredients: Serves for 2 peoples 
  • squid                  400g
  • Salt                   1/2 teaspoon
  • Sugar                  1 table spoon
  • red capsicum           50g
  • green capsicum         50g 
  • Onion                  1/2 
  • Spring onion cut       1 table spoon
  • ginger slices          1 table spoon
  • fresh chopped garlic   1 table spoon
  • red wine               30ml
    Preparation:
       1-Clean and  cut squid with nieces decoration and fried in a hot pot an about 3 to 5 minutes. Then pull out in to a big plat.
       2-Cut capsicum in a small pieces,  chopped garlic, cut ginger in a thin slice , green spring onion cut in a short, onion cut slices.
       3-Fried  in a hot pot until good small and a lit bit brown. Then add squid, red wine and stir well. When the squid is well cook add capsicum, onion, sea sauce and eat with soy sauce and chili.

Cook Potato Soup With Chicken Stock( Cambodian Style)

Ingredients: Serves 2 peoples 
  • potato                 500g
  • Salt                   1/2 teaspoon
  • Sugar                  1 table spoon
  • Butter                 50g
  • Pepper(powder)         1/2 teaspoon
  • Orion                  1/2 
  • Spring onion chop      1 table spoon
  • Cream                  100 ml
  • Chicken Stock Soup     1 Liter
    Preparation:
       1-Peal potato and cut in to small piece, cut onion in thin lice put the soup.
       2-Put butter in to the hot pot and fried onion until a bit brown and smell good. Then add soup  in to the pot and boil until 100C.Add potato and cook until well cook. Then take all soup to put in to the blander and mix until mix well.
       3-Pour back in to the hot pot and heat medium hot and stir gently until the soup boil. Then add cream in to the soup, then add salt , pepper, sugar and stir until soup boil again. Then serve hot and add chop spring onion.

Ingredients: Serve for 2 peoples 

  • Fish Filet             500g
  • Salt                   1 teaspoon
  • Sugar                  1 table spoon
  • Vegetable Oil          4 table spoons
  • Seasonal sauce         2 table spoons
  • Wince rice             2 table spoon
  • Pepper(powder)         1/2 teaspoon
  • Fish sauce             1 table spoon
    Preparation:  
        1-Mix sugar, salt, fish sauce, wine, seasonal sauce then marinate with fish filet and leave it for 15 minutes.
       2-Fired fish and then add pepper on top of the fish and eat.

Ingredients: Serve for 2 peoples  
  • Fresh Chinese broccoli    400g
  • Chinese wine              1 table spoons 
  • sugar                     1 table spoons        
  • salt                      1 table spoon        
  • fish sauce               1table spoon                     
  • vegetable oil             4 table spoons          
  • Pepper                    1 table spoon
  • garlic slice              1 table spoon 
  • seasonal sauce            2 table spoons
  • Mushroom Button           10
  • Black Chinese mushroom    5   
Preparation:
   1-Boil the water in a work then put Chinese broccoli in to the hot water and  stir about 3 minutes then take them out and put in to the cold water then take it  out put in the basket.

   2-Black mushroom put in to the water until soft then take it out.
   3-Put vegetable oil in to a hot work and heat, then fried the black mushroom and button mushroom until well cook and add seasonal sauce , wine, oyster sauce , salt, sugar, broccoli, pepper stir mix well then eat.

Ingredients: Serve for 2 peoples  
  • Fresh mussels         500g
  • Butter                2 table spoons
  • coriander(leaves)     2 table spoons
  • white wine            3 table spoons 
  • sugar                 2 table spoons        
  • chili chop            2 table spoons
  • lemongrass(leaves)    1 table spoon
  • salt                  1 table spoon        
  • fish sauce            1 table spoon                      
  • vegetable oil         1 table spoon          
  • freshly squeezed lime juice    3 table spoons
  • brown sugar                    1 table spoon
  • lemon juice                    2 table spoons        
  • garlic slice                   1 table spoon   
Preparation:
   1-Make sauce buy mixing chop chili, sugar, lemongrass, salt, fish sauce,slice garlic and lemon juice.

   2-Clean all mussels and steam with white wine, butter and coriander in the hot pot without water and cover.
   3-When mussels open the mouth add sauce, stir and fried until mix well then eat.

Tom Yum kung (Thai Shrimp Soup ?

Ingredients: Serve for 2 peoples  

  • raw shrimp(green prawns)        500g
  • vegetable oil                   1 table spoon 
  • stalks lemon grasses ,bruised   2 
  • coriander roots, cleaned and bruised  2
  • galangal or fresh ginger        4 cm long  4 slices 
  • small red chilies               4
  • Kaffir lime leaves              4         
  • chicken soup juice              1 litter               
  • canned straw mushrooms, halved  120g
  • fish sauce                      2 tea spoon
  • freshly squeezed lime juice     3 table spoons
  • brown sugar                     1 table spoon
  • some fresh cilantro (coriander)leaves
  • garlic slice                    1 table spoon   
Preparation: 30 minutes
Cooking 30-35 minutes
   1-Peel and devein the shrimp, leaving the tails on. Reserve the head and shells. Heat the oil in a large saucepan over medium-high heat. Add the shrimp heads and shells and cook, stirring constantly, until the shells are orange and highly fragrant, about 5 minutes. Add the lemon grasses, and stir to combine. Pour in the soup juice and bring to a boil. Decrease the heat to medium -low and gently simmer for 20 minutes. Strain the shrimp stock through a fine-mesh sieve in a clean soup pot. Discard the shells and coriander root.
  2-Return to the lemongrass, galangal,chiles, lime leaves to the stained stock. Add the shrimp and simmer until they change color , 2 -3 minutes. Serve hot garnished with cilantro.

Ingredients: Serve for 2 peoples  
  • tamarind past                 1 table spoons
  • Asian Chile oil               1 table spoon 
  • dried red chilies crumbled   
  • gloves garlic finely chopped  1
  • minced fresh ginger           1 table spoon
  • dark soy sauce                1 teaspoon
  • oyster sauce                  1 table spoon
  • salt                          1 table spoon               
  • sugar                         1 table spoon
  • balk pepper powder            1 tea spoon
  • chicken soup juice            1 litter  
  • curry leaves(optional)
  • boneless skinless chicken breasts, cut in to thin strip  400g
  • carrot, finely chopped                        1
  • bean sprouts                                  50g  
  • small green bell pepper (capsicum), chopped        1
  • red bell pepper (capsicum), chopped           1
  • ounces rice vermicelli                        200g
  • fresh cilantro (coriander),to garnish     2 table spoons
  • garlic chop                               1 table spoon   
Preparation: 30 minutes
Cooking 25 minutes
   1-Mix the tamarind, Chile oil, garlic chop ,ginger , soy sauce and oyster sauces in a large wok. Warm the wok over medium heat. Add sugar and curry leaves, if using and pour in the chicken.
   2-Bring to a boil ,stirring constantly. Simmer for 5 minutes ,stir often. Stir in the carrots, bean sprouts, baby corn , bell peppers, and rice noodles and simmer until the chicken and vegetable are tender ,about 10 minutes. Garnish with the cilantro and serve hot.

Ingredients: Serves 2 peoples  
  • skinless Chicken              400g
  • chicken soup juice            1 litters
  • rice wine                     3 table spoons  
  • finely granted fresh ginger   3 tea spoons
  • cornstarch(corn flour)        400g
  • chicken egg                   1
  • salt                          1 table spoon               
  • sugar                         1 table spoon
  • balk pepper powder            1 tea spoon 
  • scallion spring onion finely slice   1, to garnish   
Preparation: 15 minutes
Cooking 20minutes
    1-Combine the chicken stock , rice wine and ginger in a large soup pot and bring to a boil. Decrease the hit to medium -low, add the chicken and corn, and simmer until the chicken is cooked, about 10mn.Remove the chicken and set a side to cool. Shred the chicken using your figure and return to the pot. Combine the water and cornstarch in a small bowl to make a smooth, thin past. Add to the soup, stirring frequently until thickened ,3 to 5 minutes.
    2-Beat the egg lightly in a small bowl. Gradually pour the egg mixture in to the soup in a seam steady stream ,beating gently and constantly  with a balloon whisk ,to create thin threats of egg. Season with salt. Serve the soup hot ,garnished with scallion eat with rice or bread.
